You know the saying, “Love at first bite,” or is it “Love at first sight?” Either way, Elizabeth Emily Harrison and Alex Dean Mundt can use both phrases to describe how they unexpectedly met. Alex was visiting friends at the College of St. Benedict during his last semester, and Elizabeth by chance happened to stop over with her friends. She had just finished some baking and thoughtfully wanted to share it with her neighbors. With one bite in, Alex absolutely adored Elizabeth’s baking. After just meeting, Elizabeth secretly told her friends, “I just met the guy I am going to marry!” Since both Elizabeth and Alex were obviously quite interested in the other, they decided to meet the following day at the Local Blend. From very early on, the two were certain they had both found their soul mates.
On July 11, 2015 the weather was as expected for a middle of summer wedding…hot, humid, and plenty of beaming sunshine. Prior to their ceremony, Elizabeth and Alex exchanged meaningful gifts, with an affectionate note attached to each other’s. They continued their wedding day together with a photo-shoot in a sentimentally cherished location. “We had our first look in my grandparent’s field. I walked through a little forest with trees on both sides of me to find Alex waiting in the clearing. He was glowing with love and joy! We both got very emotional and started crying. It was truly a special moment,” Elizabeth blissfully remembers. Elizabeth radiated in her mom’s custom renovated wedding dress, which was specially designed by a local seamstress, making Elizabeth’s dream and vision a reality.

Elizabeth + Alexander’s Wedding Highlights:
Elizabeth is the daughter of Charlie and Sandy Harrison of St. Cloud. Elizabeth is a fourth grade teacher. Alexander is the son of Dean and Kim Mundt of Lakeville. Alex is a middle and high school teacher.
The First Look
The couple’s first look was in Elizabeth’s grandparent’s field, a perfect place for a sentimental first ‘hello’ on their big day. Elizabeth’s wedding jewelry is from DJ Bitzan while Alex’s grooms’ style is from Knight’s Chamber Clothiers.
The Meaningful Touches
Elizabeth and Alex’s wedding was oozing with sweet details and personal touches. The colors used were inspired from her grandmother’s ring and earrings, which she wore on her big day. Mismatched china was used for all of the place settings, and Alex’s aunt made small heart plates for each guest as a wedding favor, imprinted with the pattern from lace doilies from Alex’s great-grandmother. The couples decor & rentals were designed by Geyer Wedding & Event Rental.
Charming music created a dreamy feel as 240 guests filed into the “enchanted forest” themed reception venue at 912 Regency Plaza. The venue was completely transformed into a whimsical outdoorsy atmosphere, with branches from Elizabeth’s grandparent’s forest, and hand made wood blocks for centerpieces. Gorgeous loose stems with full, romantic blooms were provided by Stems and Vines, which were instilled into test tube bud vases for floral centerpieces.
More to Love
Wedding guests were served a delicious meal by Custom Catering while Elizabeth and Alex danced their first dance to “Mean to Me” by Brett Eldridge. Stems and Vines outfitted the vintage styled bridesmaids with stunning bouquets while the adorable flower girl and ring bearers took the dance floor in true Bennie-Johnnie style to Billy Joel’s, “Piano Man”. The evening ended perfectly underneath the stars and the twinkling lights of the 912 Regency Plaza patio.
